Crockpot Cranberry Orange Glazed Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Zest of one orange

Method

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a medium bowl, combine the cranberries, orange juice, honey, brown sugar, cinnamon, ginger, salt, and pepper. Stir well to combine.
  3. Pour the cranberry mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4-5 hours, or until the chicken is tender and cooked through.
  5. Once the chicken is done, remove it from the slow cooker and set aside.
  6. In a small bowl, mix the cornstarch and water to create a slurry.
  7. Pour the slurry into the sauce in the slow cooker and stir well.
  8. Turn the slow cooker to high and let the sauce thicken for about 10 minutes.
  9. Return the chicken to the slow cooker and coat it with the thickened sauce.
  10. Sprinkle the orange zest over the chicken before serving.
