  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or oat flour for a heartier texture)
  • 1–2 tbsp maple syrup or honey (optional for added sweetness)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • ½ tsp baking powder
  • Pinch of salt
  • 1 cup grated carrots
  • ¼ cup chopped walnuts or pecans (optional)

  3. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
  4. Mix the Base
  5. In a bowl, whisk together cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth. Add almond flour, baking powder, cinnamon, nutmeg, and salt. Stir until fully combined.
