One-Pot Beef and Garlic Parmesan Spinach Pasta

Ingredients

  • 1 pound ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 5 ounces fresh spinach, roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving

Method

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease.
  2. Add the olive oil, minced garlic, and chopped onion to the pot. Cook until the onion is softened and translucent, about 3-4 minutes.
  3. Stir in the Italian seasoning, salt, and pepper.
  4. Pour in the beef broth and diced tomatoes.
  5. Bring to a boil.
  6. Add the pasta to the pot. Make sure the pasta is submerged in the liquid. Reduce heat to medium, cover, and simmer for 12-15 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent sticking.
  7. Stir in the fresh spinach until it wilts, about 1-2 minutes.
  8. Stir in the heavy cream and Parmesan cheese until the sauce is creamy and smooth.
  9. Serve immediately, garnished with extra Parmesan cheese.
